    Culto, located in the Palacio del Carmen, Autograph Collection, is a new bistro that proposes a contemporary way of understanding Galician cuisine under the concept Galician Mood.

    Santiago de Compostela welcomes a new gastronomic space with the arrival of Culto, the bistro at Palacio del Carmen, Autograph Collection.

    The project was created with the aim of reinterpreting Galician cuisine from a contemporary perspective. A concept that moves away from complexity and focuses on what is essential: the product, the surroundings, and a way of understanding cooking rooted in closeness and authenticity.

    Culto is part of the hotel following the recent renovation of the building. Its goal is to become a meeting point for both travellers and the local community. An open space where gastronomy accompanies different moments of the day and the city’s rhythm.

    Galician Mood: a way of understanding Galician cuisine

    The concept that defines Culto is Galician Mood. A way of experiencing Galician gastronomy through respect for the product and well-executed simplicity.

    The cuisine is based on seafood and local produce, which sets the rhythm of each dish. The focus is not on technical complexity, but on clarity of flavour and culinary honesty.

    Techniques are precise and recognisable. Boiling, roasting, and grilling allow the product to remain the true protagonist of the gastronomic experience.

    A space that evolves throughout the day

    Culto has been designed as a living space, offering different experiences throughout the day.

    In the morning, it welcomes breakfasts and brunch in a relaxed atmosphere. During the day, it becomes an ideal setting for leisurely lunches or informal meetings. In the evening, the space transforms into a wine bar and cocktail venue, extending the gastronomic experience into dinner.

    This flexibility turns Culto into a dynamic space, constantly evolving and adapting to the rhythm of the city.

    Galician cuisine with a contemporary vision

    The gastronomic proposal is based on high-quality Galician produce. The Atlantic Ocean and Galician land define the essence of the menu, blending tradition and modernity.

    Daily fresh fish, Atlantic seafood, and seasonal vegetables coexist with dishes that reinterpret traditional recipes through a contemporary lens.

    The result is a recognisable cuisine designed for sharing and enjoyment without unnecessary complexity.

    Wine as a guiding thread

    Wine plays a fundamental role at Culto. The selection spans denominations linked to the Camino de Santiago, creating a direct dialogue between territory, culture, and gastronomy.

    The wine list focuses on expressive labels, many of them limited production. Highlights include long-aged Albariños and red wines made from native grape varieties such as Sousón, Brancellao, and Caiño.

    The offer is completed with signature wines and carefully selected international references, including productions from the Douro and rare French labels not commonly found in restaurants.

    A space connected to Santiago

    Culto is also integrated into the hotel surroundings through different spaces that enhance the experience.

    The Camelio Garden becomes one of the most emblematic areas of the project. An open space that connects with nature and the slow rhythm of the city.

    In addition, the Camino Communal Table is designed as a shared dining concept between travellers and locals, inspired by the tradition of the Camino de Santiago and its spirit of encounter.

    With the opening of Culto, Santiago de Compostela gains a new gastronomic space that expands its culinary offering and reinforces its identity.

    More than a restaurant, Culto is conceived as a way of understanding Galician gastronomy through calm, product quality, and connection with its surroundings.
