JW Marriott Hotel Madrid presents Botánicos Álvarez, its new gastronomic concept inspired by the historic perfumery Álvarez Gómez and the ancient art of apothecaries.
The project recovers the essence of spaces where aromas, ingredients, and knowledge were blended, translating it into a contemporary culinary proposal focused on product quality, balance, and experience.
A concept inspired by tradition and the art of blending
Botánicos Álvarez is born as a tribute to the historic perfumery Álvarez Gómez and the tradition of apothecaries.
In these spaces, ingredients were precisely combined to create unique formulas. That idea is now reinterpreted gastronomically, where flavors, aromas, and techniques come together to shape a complete experience.
The concept is structured into two distinct but complementary spaces:
- La Botica: a social lobby bar with a more informal cocktail-focused offer
- Sala de Mezclas: a restaurant with refined and sophisticated cuisine
Both share the same philosophy: quality ingredients and honest cooking.

Located in the lobby of JW Marriott Hotel Madrid, La Botica is a lively, dynamic space open to both guests and locals.
Its gastronomic proposal is based on simple, recognizable dishes designed for sharing, reviving Madrid’s aperitif culture and social dining experience.
Featured dishes include:
- Traditional steak tartare
- Pure Iberian ham croquettes
- Spicy sea bass with glass potato
- Onion and parmesan tatin
- Sando-style sandwiches

Signature cocktail bar inspired by perfumery
The cocktail program at La Botica was developed with Amarguería and mixologist Alberto Villarroel.
It is based on a twist on classic concept, reinterpreting iconic cocktails through a sensory approach inspired by perfumery.
Signature cocktails include:
- Jean Claude Pandam: London Dry gin infused with pandan, lime cordial, dry vermouth
- Negroni Marriott: carbonated negroni with gin, Campari, sweet vermouth, chamomile
- Chingón: mezcal, lime, kiwi, white cocoa
- New Fashioned: bourbon, elderflower, rose water, orange
The menu is completed with vermouths, wines, and spirits, many made with ingredients from the JW Garden.

Sala de Mezclas is the restaurant within Botánicos Álvarez at JW Marriott Hotel Madrid. It is an elegant, calm, and welcoming space where cuisine becomes more complex without losing its recognisable essence.
The menu blends tradition and international influence, always with product at the center:
- Beef with egg and caper vinaigrette
- Salmon millefeuille with herb butter
- Pappardelle with beef ragù and parmesan
- Italian-inspired pizzas
- Roman-style sole with tartar sauce
